Curriculum     

   This course offers organized, specialized learning experiences which include theory, laboratory, and shop experience as they relate to nutrition, planning, selection, purchasing, preserving, preparing, and serving food and food products.  Included in this program is the study of a variety of foods and their nutritional values, food processing, quantity cooking, storing equipment, and sanitation in food handling and management.  Instruction will emphasize nutrition and quantity food-service activities in commercial food-service establishments.

   Wallace State graduates easily find work in this field.  Graduates work in:

  • Delicatessens
  • Hotels
  • Industrial Plants
  • Travel Terminals
  • Clubhouses
  • Specialty Food Services

   The study of nutrition can be useful outside the realm of work.  Knowledge gained can be applied to food preparation in the home.

    Hands-On Training

   At Wallace State much time is spent receiving hands-on training supervised by a professional.  Wallace State Commercial Food Preparation and Service students have the opportunity to prepare meals for special events hosted by the college.  Having the chance to expand one's knowledge through on-the-job training and applying that knowledge is the formula for success at Wallace State.
